Crazy for Mochi Pancakes!

Happy holidays! Here we are just one week away from Christmas. Christmas music fills my home, the lights are twinkling and there’s tape and wrap just about everywhere! And, I love every second of it.

One of the best parts of Christmas for me is sharing joy with family and friends. Siu Yen, my sweet little penguin, wishes everyone a very Merry Christmas! She’s helping me to pack up her favorite Christmas morning treat: Mochi Pancakes.

We hope you give them a try! You might fall in love with the mochi sweetness and the chewy, fluffy texture.

Mochi Pancakes, Serves 8

Ingredients

  • 1 C all-purpose flour
  • 1 C glutinous rice flour (green and white bag sold at your local Asian market)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Jar version: Above ingredients are included. Grab the following from your pantry and follow the recipe:

  • 1/4 C sugar
  • 2 eggs
  • 1 1/4 – 1 1/2 C unsweetened soy milk (more to thin, if needed)
  • 2 T vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Add both flours, baking soda, sugar and salt into a mixing bowl and whisk until incorporated.
  2. In a separate bowl, mix together: eggs, 1 1/4 C soy milk, oil and vanilla extract.
  3. Pour wet ingredients into the dry ingredients.
  4. Stir into a smooth batter; add more milk to thin, if needed.
  5. Drop 1/4 C of batter onto a greased, hot skillet.
  6. Cook until small bubbles appear. Flip and cook for another minute until cook through.
  7. Repeat.
  8. Serve pancakes with maple syrup and fresh berries.
